Ingredients

Instructions
- amount of cal = 1 percent of weight of corn
- For example:
- 50kg of corn =50,000grams. 1 percent of 50000 x .01 = 500 -- so 500 grams of cal or 0.5kg
- weigh dry weight .. figure out how much cal you need
- rinse the corn
- make a lime bath for your corn...
- hotel pan filled with 4 gallons of water and cal
- get the water heated up a bit and make sure the cal is stirred in good
- pour in the corn
- skim whatever floats to the top
- bring up to a boil
- medium simmer it for a good hour - my experiment today is to let it simmer for 2 hours and steep for 24
- i keep it covered so the water doesn't evaporate away
- I rinsed w cold water 3 times
- I ground it
- I put 3 cup of water with 1 TBSP salt
Additional Notes
a batch is 6 5lb bags from koki’s. … 30lbs. i was told that nixtamal is twice the weight of dry corn. so i slacked 15lbs of wapsie valley.. maybe i didn’t simmer it long enought to get that water weight — but i came up with 23lbs wet from 15lbs dry. sounds like i messed up
