Ingredients

dried corn

Instructions

  1. amount of cal = 1 percent of weight of corn
  2. For example:
  3. 50kg of corn =50,000grams. 1 percent of 50000 x .01 = 500 -- so 500 grams of cal or 0.5kg
  4. weigh dry weight .. figure out how much cal you need
  5. rinse the corn
  6. make a lime bath for your corn...
  7. hotel pan filled with 4 gallons of water and cal
  8. get the water heated up a bit and make sure the cal is stirred in good
  9. pour in the corn
  10. skim whatever floats to the top
  11. bring up to a boil
  12. medium simmer it for a good hour - my experiment today is to let it simmer for 2 hours and steep for 24
  13. i keep it covered so the water doesn't evaporate away
  14. I rinsed w cold water 3 times
  15. I ground it
  16. I put 3 cup of water with 1 TBSP salt

Additional Notes

a batch is 6 5lb bags from koki’s. … 30lbs. i was told that nixtamal is twice the weight of dry corn. so i slacked 15lbs of wapsie valley.. maybe i didn’t simmer it long enought to get that water weight — but i came up with 23lbs wet from 15lbs dry. sounds like i messed up
