Chicken w/ Cranberries & Roasted Poblanos Tamale filling
Ingredients
4 chicken, brined, seared, braised, pulled
4 pints (2 qts) roasted, blended poblanos, simmered in lard
Lime juice
1 cup garlic, blackened skillet, then fine dice or blended into poblanos
2 or 3 or more? teasp All Spice (seems to remove an bitter flavor in the poblanos
5lb bag of cranberries, leave whole, they will cook a bit while the tamale is steamed and it seems perfect.
cup or so of lard for simmering blended poblanos
herbs?
salt?
